Project Made: Make Dinner for a Family in Need

For today's Project Made post, I wanted to share with you a quick and easy recipe that you can make for someone going through a tough time. Whether they are experiencing an illness, depression, or have been in a serious accident, the last thing the family or the person involved wants to think about is what's for dinner. Think of those that you know taking care of someone sick day in and day out. They don't ask for anything, and yet their life is absolute chaos. I experienced this first hand, watching my mother in law taking care of Mr. Tommy (my father-in-law) every single day. She is one of the strongest women I know!! One small Random Act of Kindness, like bringing someone a home cooked meal, is just one less worry and can really brighten their day.
This recipe was given to me by my sister-in-law Terri. She has the biggest heart of anyone I have ever met!!! I am just so lucky to have married into such a warm and caring family.
Here's what you will need:
Shell Pasta - one bag
Broccolini or Asparagus - one bunch
Bacon
Mayonnaise
Dijon Mustard
Lemon
To begin, bring water to a boil and cook the pasta. When the pasta is a few minutes off being ready, chop up and throw in the broccolini or asparagus so that they cook quickly, but are still crunchy.

While the pasta is cooking, have the bacon cooking as well. Once cooked, take the pasta off the heat and drain in a colander. While the pasta is cooling and draining, paper towel dry the oil off the bacon, and crush/cut into small bits. (like bacon bits) Place pasta into a bowl and mix in one cup of mayonnaise and 2 table spoons of Mustard. Mix well. I like to taste test the pasta and add more mayonnaise or mustard until I am satisfied. Finish off with a squirt of lemon juice and top with bacon bits.

This pasta lasts for a few days in a refrigerator safe container. I like to serve cold or hot. It's delicious both ways.
